“Aia dei Colombi” is an area located on the hills, through large vineyards. The farm was created in 2002 and represents the effect of a consolidated rural tradition, which is based on the Pascale family’s passion for vineyards and wines. Its aim is to combine typicalness with quality in the production of wines: all that to emphasize the great and natural aptitude of the Sannio, an area around Benevento, for vine growing.
All the cultivation methods are conscientious and geared towards the protection of the environment: it is the principal factor for wines recognizability, thus its preservation is fundamental as guarantee of typicalness in the course of time. Only grapes coming from the farm vineyards are worked in the cellar, so that every production phase is under control. Besides, by making a selection in each vineyard, the wines gain an unmistakable identity.
Tasting note: In this case, the grape harvest in the second half of October, made a long-fermented in stainless sille skins and then spend a year in barrique and six in the bottle. This certainly gives raise more balanced, but it will be better to wait three years to assess the most of this expression will give the Aglianico territory. The glass is free of exchanging pleasantries, leaving ample room for notes and fruity in the mouth, freshness and minerality typical of the grape. The drink is very nice with smooth tannins and the wine evolves toward elegance.
Food Pairing: Pigeon stuffed or pappacelle with pork.
