“Aia dei Colombi” is an area located on the hills, through large vineyards. The farm was created in 2002 and represents the effect of a consolidated rural tradition, which is based on the Pascale family’s passion for vineyards and wines. Its aim is to combine typicalness with quality in the production of wines: all that to emphasize the great and natural aptitude of the Sannio, an area around Benevento, for vine growing.
All the cultivation methods are conscientious and geared towards the protection of the environment: it is the principal factor for wines recognizability, thus its preservation is fundamental as guarantee of typicalness in the course of time. Only grapes coming from the farm vineyards are worked in the cellar, so that every production phase is under control. Besides, by making a selection in each vineyard, the wines gain an unmistakable identity.
Tasting note: A grape of ancient origin that lives to this "Falanghina" Aia dei Colombi has long been popular in the hills of Sannio Beneventano to 300 m above sea level and where best expressed today his potential. Stages of vinification encourage conservation potential of the wine variety. The wine is straw yellow with green tints. The fruity bouquet shows notes of peach and apple. The taste is fresh and persistent.
Food Pairing: Suitable for starters and fish dishes in general, white meat, with excellent mozzarella di bufala campana cheese and fresh pasta soft.
