Aia dei Colombi, framed in a landscape designed by vineyards, was founded in 2002 in a sign of a well-established tradition, favoring an Pascale family passion for the vineyards and wines. The intent is to combine quality and typicality in the wine, enhancing the vocation of a territory, the Sannio Benevento, by the extraordinary abilities vines. The vineyards are conducted through care scrupulous and careful cultivation, carried out with full respect for the environment, with knowledge that the environment is the main actor in the recognition of wine and therefore a proper conservation can be maintained over the typicality years. In the cellar the grapes are processed exclusively from vineyards in order to control every stage of the production chain, also the choice of obtaining a selection from each vineyard helps to give the wines an identity unmistakable.
Tasting note: Color charge, so dried fruit and a pleasing hint of toast. Goblet of great persistence, to be tested with excellent dry pastry.
Food Pairing: For the most refined palates recommend a good breed of sheep Laticauda accompanied with chestnut honey.
